healthy twix bars

Is there anyone else out there that  literally cannot live without sweets? Dessert is the one meal you look really forward to? You need a little bite of something chocolate-y after every meal or else you just don’t feel satisfied? Well- same. Enter these healthy twix bars that you can actually feel good about eating!  They’re made with a few clean, simple ingredients and couldn’t be easier to whip up! 

The original recipe comes from Rachael Devaeux (rachaelsgoodeats), and she NAILED it. I switched up the chocolate and used Lily’s Dark Chocolate Baking Chips which are sugar free and made from Stevia. I always like to have a stash of these in my fridge or freezer. Perfect for a little snack throughout the day, when guests come over, and of course for dessert at the end of the night!

ingredients

SHORTBREAD LAYER

  • 1/2 cup coconut flour

  • 1/2 cup almond flour

  • 1/3 cup coconut oil, melted

  • 3 tbsp honey, warmed (feel free to sub maple syrup)

CARAMEL LAYER

  • 1/2 cup creamy almond butter or peanut butter

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

  • 1/4 cup maple syrup

  • pinch sea salt

CHOCOLATE LAYER

  • 1/2 cup lily’s stevia sweetened chocolate chips, or your favorite dark chocolate

  • 1 tbsp coconut oil

  • flakey maldon sea salt, for sprinkling on top

instructions

SHORTBREAD LAYER

  1. Preheat oven to 350 degrees F.

  2. Combine coconut + almond flours with melted coconut oil and warmed honey in a large bowl. Stir out all the crumbles of flour until thoroughly combined.

  3. Line a 9x5 loaf pan with parchment paper and pack down shortbread mixture into the base using a rubber spatula, or wet hands.

  4. Bake for 10-12 minutes, or until starting to turn golden brown. Let cool completely.

CARAMEL LAYER

  1. Combine almond butter, coconut oil, vanilla, maple syrup and sea salt in a saucepan over the stove on medium-low heat and heat until completely liquified, whisking together, about 2-3 minutes. Let cool completely.

CHOCOLATE LAYER

  1. Combine chocolate chips and coconut oil in a microwave safe bowl. Warm in microwave for 30 sec intervals, stirring in between, until completely melted.

TWIX BARS

  1. Once shortbread & caramel have completely cooled, pour caramel sauce on top, spreading out evenly. Set in freezer until hard, about 1-2 hours.

  2. Remove from freezer once frozen and spread melted chocolate evenly over top. Place back in freezer for 5-10 minutes. Once chocolate is semi-set, sprinkle flakey sea salt over top. (This step helps so that the sea salt doesn’t sink into the chocolate and disappear.)

  3. Place back in freezer for 15-20 minutes. Once chilled, remove the bars from the pan by pulling up on the sides of the parchment paper.

  4. Slice into bars, squares, mini bites - whatever your preference is! Store in an airtight container in the fridge or freezer.
